Method:
Place the prepared leeks in a lar£e
pan with the oil and seasgn well. Cover
and simmer fgr 10 minutes.
Add the lemon rind, chopped tomatoes,
halved olives and lemon juice.
Simmer uncgvered fgr a further 10 mins
and serve hot with slices of crust8
French bread.
