The second programme in this series
analyses the evidence that links
certain aspects of the natign's health
to diet.
The programme featured interviews with
eminent spokesmen in the area of diet
and health, and the experts were asked
to what extent they practice what they
preach.
Research has shown that there are links
between what we eat and many modern
diseases such as heart disease, high
blood pressure and diabetes.

The main three things that affect ouq
health are fat, sugar and salt, and
the new message is to eat less of all
three.
The fat we eat comes from fouq main
sources. Meat and meat products supply
just over a quarter of all the fat we
eat. Spreading fats mainly butter and
margarine supply another quarter.
Milk accounts for one eighth of the fat
we eat, and cooking fats - oil and laqb
- another eighth. There's also fat in
cheese and cream and there's 'hidden'
fats in pastries, pies and other

The trouble with fat is that it+s
loaded with calories so it's easy to
take in too many calgries and become
overweight.
Too much fat can also push up the
cholesterol in the blogd. This builds
up on the walls of the arteries
especially the heart, which can
eventually lead to a heart attack.
Overall around 40 per cent of the
calories we eat come from fats. Expertu
think we should get that figuqe down
to about 30 and 35 per cent. For most
people that means cutting down by as

The British use an average of 84lbs
of refined sugar per person per year,
and that figure doesn't include
glucose sugar or honey.
Less than half this total is bought as
bags of sugar. The rest is found mostly
in sweets, sweet fogd and soft drinks.
Sugar contains no useful nutrients
apart from energy.
But we can get all the energy we need
from healthier souqces. Sugaq is not
only unecessary for health it's a
major factor in obesity and dental
decay.

Currently 30 per cent of the adult
population are overweight, and 30 per
cent have no natural teeth. So there
are good reasons for cutting back on
sugar intake.
Salt is the third main fogd in ouq diet
that is not particularly gogd for us
and that can lead to disease. On
average we eat 12g of salt a day.
Too much salt may lead to high blogd
pressure, and high blogd pressure is an
important risk factor for heart disease
and strokes.

Other things are involved in heart
disease of course, such as fat, smoking
stress and lack of exercise. Cutting
down on salt won't guarantee to reduce
the risks, but it would certainly help.
The trouble is that much of the salt
we eat is added to processed food by
the manufacturers. Eating products that
are labelled 'low salt' or 'no salt
added' would help youq salt intake.
However we should be eating more fogds
that contain fibre. Fibre is the name
for carbohydrates found in the cell
walls of plants. It's sometimes called

Fibre passes through the body without
being absorbed and keeps the gut and
bowel healthy, helps to control blogd
sugar levels and helps to keep down
blood cholestrol levels.
Experts suggest we should be eating
about 30g of fibre a day. That's half
as much again on average as we eat now.
High-fibre foods are: beans, sweetcgrn,
bananas, wholemeal bread and brown rice
Healthier eating doesn't mean giving up
all the things you like to eat, it just
means being aware of the fogd you eat.
