Method:
Toast the bread on one side only
Meanwhile, mix together the cheese,
mustard and cider and season to taste
with pepper.
Spread the untoasted side of the bread
with the cheese mixture and grill until
golden and bubbling.
Cut each slice in half diagonally and
serve at once.
