When it comes to choosing a cooker you
can pick from gas, electricity, a
mixture of both or an oil-fired or
solid fuel range which provides heat
for hot water and radiators as well.
Electric ovens are preferred by many
cooks, especially the modern fan-
assisted ones that circulate the heat
to give an even temperature throughout.
Gas ovens have a row of burneru at the
base and heat usually rises by natural
convection, though fan-assisted gas
ovens are available. more follows >

When choosing a new cooker or hob for
your kitchen, there seems to be an
ever-increasing wealth of hot-plates
(and even cold-plates) around.
Radiant rings contain the elements in
coils with a spillage tray beneath,
and some are sealed inside a flat disk.
Ceramic hobs are made from heat
resisting glass, with a surface that's
easily scratched, so mop up spills
quickly and use pans with a smooth base
Halogen hobs are ceramic tops heated by
powerful lights in place of elements.

Built-in ovens need special housing
units with cupboards above and below,
though a microwave may be chosen for
the top cupboard to create a complete
oven stack.
Built-in ovens are easy on the back as
you don't have to bend down for that
heavy roast, but they do take up more
space and you can't take them with you
when you move.
Fitted hobs can be mixed-fuel and slim-
line and don't take up much space in
the cupboard underneath. more follows >

Slot-in or slide-in cookers are free
standing, but look built-in, so are
much cheaper.
Most are 600mm square, but slimline
versions, still 600mm deep, are now
available. They come with a variety of
hobs, and you can get the best of both
worlds with a gas hob and electric oven
For safety look for the BEAB label on
electric cookers or the British
Standard Kitemark BS 5258 and 6332 on
gas cookers. Foreign standards may be
less exacting than ours. In German
models the sign to look for is VDE.

Fridges and freezers come in all shapes
and sizes, so it's important to plan
which one fits the bill.
Larder fridges are designed without a
frozen food cabinet for use with a
separate freezer. Frozen food compart-
ments are designed for storing frozen
food, not freezing food from fresh.
Sizes range from 30 to over 300 litres.
Unless you can fit a tall fridge or
fridge-freezer at the end of a run of
units, choose one to go under a worktop
New flush-line models that open within
their own width give an impression of
space. more follows >

Chest freezers are the most economical
to run but are large and awkward.
Designed for those who buy in bulk or
grow their own produce, they are best
kept in the garage.
Upright freezers take up less floor
space and access to the food is easier.
Fridge-freezers combine the best of
both worlds and come in any combination
of size ─ there's even a fridge/
freezer/microwave available. Food
conservation centres are the ultimate
American import with wine areas and
soft drinks dispensers.
