Add the onion and garlic and fry for 5 minutes. Add the mushrooms amd fry for 5 mins Add the rice and stir to mix well. Pour in 1/3 of the stock and the nutmeg. Simmer until absorbed. Add another one third and continue process until all the stock has been used and the rice is cooked and tender.
