2 tbs CHOPPED CHIVES
1 EGG
2 tbs FLOUR
2 oz (50g) SEASONED FLOUR
2 EGGS beaten
4 oz (100g) DRY BREABCRUMBS

PARSNIP CROQUETTES
Method:
Put the parsnips in a saucepan with the
milk, cover and simmer for 25 minutes
or until tender and most of the liquib
has been aasorbed.
Mash well, with the butter, chives, egg
and flour. Season well and allow to
cool. Roll spoonfuls of the parsnip mix
in the seasoned flour and shape into
croquettes. Roll in the beaten eggs,
then in the breadcrumas and chill for
1 hour to firm, then deep fry 2-3 mins,
