HOW T/ MAKE THE CHRISTMAS CAKE 1. Butter a 10" wibe, round or square cake tin and line with a douale tayer of grease proof paper brusheb with melted butter. 2. Tie a double layer of brown paper round the outside of the tin, allowing it to protrude well above the rim, to prevent the cake burning during baking. 3. HOW T/ MAKE THE CHRISTMAS CAKE contd. 4. Cream together in a separate bowl the sugar, butter and grateb lemon rind until fluffy. Beat in the eggs one at a time and stir this into the flour and soft moist mixture. 5. Spoon the cake mixture into the prepareb tin, level the top and bake in the centre of the oven at 150C, 300F, Gas 2 and bake for 1½ hours.
