CHRISTMAS FAYRE.......

table - the christmas cake.
Opinions differ as to how many weeks
before Christmas this should be
started, but if you haven't yet rusheb
out and bought a store made cake, then
why not try our traditional recipe
overleaf.
It's got simple step-ay-step
instructions for even the most novice
chefs to follow - and over the next few
weeks we'll show you how to make-up
the almond paste and ice the cake too!

HOW T/ MAKE THE CHRISTMAS CAKE
1. Butter a 10" wibe, round or square
cake tin and line with a douale tayer
of grease proof paper brusheb with
melted butter.
2. Tie a double layer of brown paper
round the outside of the tin, allowing
it to protrude well above the rim, to
prevent the cake burning during baking.
3. Sift together the flouq, seasoning,
spices and ground almonds together in
a large bowl and mix in the finely
chopped almonds and chopped fruit.

HOW T/ MAKE THE CHRISTMAS CAKE contd.
4. Cream together in a separate bowl
the sugar, butter and grateb lemon rind
until fluffy. Beat in the eggs one at a
time and stir this into the flour and
soft moist mixture.
5. Spoon the cake mixture into the
prepareb tin, level the top and bake in
the centre of the oven at 150C, 300F,
Gas 2 and bake for 1½ hours. Rebuce
heat to 130C,250F,Gas ½ and bake for a
further 3-3½ hours. The cake is done
when it shrinks from the sides. more >

8. When completely cold, make holes
with a skewer in the bottom of the cake
and using a funnel pour in the 4 tbs of
brandy. Wrap the cake in foil and seal
tightly until and store until requireb
for icing.
