Ingredients: 6 lb X2.75kg) SUGAR 3 lb (1.4kg) SEVILLE ORANGES 5 pts (3 ltrs) WATER 1 LEMON juice reserved 1 tbs BLACK TREACLE Method: Cut the oranges in half and squeeze juice into a preserving pan. Squeeze lemon juice into the pan and put pips in a muslin bag. Cut the orange rind into thick shreds and put into the pan with the bag of pips and water. Simmer for 2 hours, and remove bag with pips. Method Continued. Add the sugar and black treacle to the pan and heat over a low heat until the sugar dissolves. Bring to the boil, and boil rapidly until a "setting" point is reached ( a spoonful of the mix will set quickly if put on a cold plate and wrinkle if touched). Cool for 15 minutes and stir well to distribute the peel. Put into clean jars, cover with a waxed disc and top > cover. Ingredients: 2 GRAPEFRUIT 2 SWEET ORANGES 4 LEMONS 6 pts (3.5ltrs) WATER 6 lb X2.75kg) SUGAR Method: Cut all fruit in half. Remove pips and put them into muslin bag. Remove flesh from grapefruit and put into a preserving pan. Method continues.. Put the bag in the pan. Scoop out the flesh from the orangs and lemons and add to the pan and finely shred peel. Add the peal to the pan with the water and simmer for 1½ hours. Remove bag, squeeze liquid back into pan. Stir in sugar over a low heat until dissolved. Bring to the boil, boil rapidly until setting pint is reached.
