Add chocolate and mix to a smooth dough. Divide into four pieces and roll out each to a 7" circle between two sheets greaseproof paper, then chill for 30 minutes. Heat oven to 170C, 325F, Gas 3. Bake in batches for 15 to 20 minutes until firm and leave to cool. Meanwhile, make filling, gradually adding creams to melted chocolate.
