HERBY POTATO CAKE
(serves 4)
Ingredients:
2 oz (50g) MARGARINE or BUTTER
1 large ONION thinly sliced
1 clove GARLIC finely chopped
1½ lb (700g) POTATOES grated
4 oz (100g) PLAIN FLOUR
1 tsp BICARBONATE OF SODA
SEA SALT and MILLED BLACK PEPPER
2 tbs CHOPPED FRESH PARSLEY
1 tsp DRIED THYME
1 large EGG beaten
TOMATO SLICES and PARSLEY to garnish

HERBY POTATO CAKE
Heat oven to 180C, 350F, Gas Mark 4.
Melt half fat in frying pan and fry
onion, then garlic until soft over a
low heat. Add remaining butter, keeping
some for greasing. Remove from heat.
Squeeze any excess moisture from the
potatoes and put them in a large bowl.
Sift in the flour and bicarbonate of
soda and season. Mix ingredients well.
Add onion mixture, herbs and egg, mix
well and transfer to greased 10" (25cm)
flan tin. Press down and bake for one
hour until crisp. Serve with garnish.

½ pint (300ml) SINGLE CREAM or YOGURT
